MOLISE IN TAVOLA
Molise is a small region in southern Italy. The use of sheep and sheep’s milk was brought down from the Abruzzo, while pasta and fish preparations migrated north from Puglia.
Molise is one of Italy’s smallest regions and was declared independent from Abruzzo as recently as 1963. Molise is almost completely covered with mountains, including the areas closest to the coast. Despite the cold winters, agriculture remains a thriving industry. In addition to wine, olive, wheat, corn and tobacco are all grown in here.
Molise was first occupied by the Sanniti people, and was then taken over by the Romans despite the valiant efforts of the inhabitants. The history of the region mirrors that of Abruzzo and was dominated by the Lombards, the Franks and then by the Normans, who gave the region its name.
Molise was first considered a part of Campania, then Puglia, before becoming a province of Abruzzo. The region has always suffered from emigration, especially in the nineteenth century.
Molise was the only region in Italy to come under the rule of Sicily. The Sicilian influence is evident in the region’s gastronomic culture. Sheep are an important to the regional economy, as it is in many other regions in southern Italy. You will find that the lamb dishes are very similar to the recipes of Abruzzo. In Molise, pigskin is often used to make sauces for pasta.
The types of pasta you find here are resemble what you find in the neighboring regions. Cavatieddi and Sagne are two popular pasta shapes that come from Puglia. The Puglian influence is also noticeable in the regional custom of pairing cheese and fish, as in the recipe for stuffed, broiled mussels.
The local cheeses are primarily made from sheep’s milk and include names like Pecorino, Scamorza, Caciocavallo and Provolone. Ventricina, the pork sausage typically found in Abruzzo, is produced in Molise as well. Here is the seasoned with fennel seeds and peperoncino.
In Molise, many of the traditional desserts are made with an intense, aromatic olive oil.

San Giuliano del Sannio with its 1069 inhabitants is located 15 km south of the capital city of Campobasso, among woods and farmland. The isolated location and the total lack of industries have allowed the town to maintain intact most of its heritage, in fact, it is a real nature reserve, as indeed the whole valley of the Tammaro.
The small town rises on a rock overlooking the wide plain of the Tammaro river, inside the Matese mountain group. The name probably derives from an ancient church in honor of San Giuliano martyr, and the word @del Sannio@ was added in 1863 after the unification of Italy.
The appearance of the town is clean and cheerful. The wide main street, Via Roma, brings the Piazza della Liberta (Freedom Square), where the town hall is located, once a marquis residence.
The town attracts the attention of anyone that is looking for an oasis of Tranquillity and want to get in touch with a world that keeps alive old tradition not only as yearly events but also as a way of life.
Along the main street and in plain sight is the “fountain”, a monument dearest to Sangiulianesi of which they are proud. The natural spring water offered refreshment for travelers and was the envy of the nearby towns.
In its territory there are traces of pre-Roman settlements, but the earliest historical information dates back to the Lombard period when San Giuliano was part pf the ”
Gastaldato di Bojano” and later of the Molise region. Under the Angevin (1306) domination its lord was Amerigo di Sus. Other Feudal lords were Guidone di Molino, the Sanframondo, Di Capua, carafa, Longo and the Severino families.
There are many hypotheses about the origin of this singular ceremony in which the religious element and the military are closely related.
The statue of St. Nicola was commissioned in 1724 and, according to one hypothesis, upon its arrival in town was welcomed by the military who were shooting their riffles up in the air as sign of Joy.
Another hypothesis refers to a singular fact that happened to some shepherds from the neighboring region Puglie who wore the insignia of St, Nicola, Those shepperd were Attacked by robbers, and the residents of San Giuliano came to their aid with riffles on hand. As a gesture of gratitude the shepherds gave the towns people the insignia that they were wearing, that os St. Nicola.
More accurate historically, is the third hypothesis which goes back to the unification of Italy when a group of partisans happened to be in the town of san Giuliano on the day of the festivity and fired their guns in honor of the saint.
Another long waited event is the auto rally, which takes place on the last week of august.

The larger Casale, equipped with a modern heating system, on the ground floor a small foyer with fireplace, a small dining room whose walls are all in stone in the form of a cave, a fully functioning kitchen and a small bathroom . A staircase leads to the upper floor where there are 2 bedrooms of which one with onsite bathroom, a small connecting foyer, and another bathroom and a small kitchen. The previous wooden window frames were not removed during the recent restoration, new metal have been affixed to the exterior of the new windows, as double glazed windows and doors, special fixtures in iron and glass with rubber gaskets that allow a total hermetic closure. The result is excellent for both the aesthetic appearance and the aspect linked to the thermal seal, as well as home security even if the area is considered quite safe. The house in the warm months is exceptionally cool even during the seasons hottest as was that of 2003. During the cold months the heating system because of its efficiency and the double-glazing make the house extremely comfortable.
The small Casale, only 50 sqm, equipped also with its own heating system. Has a ceiling with exposed chestnut trusses. Developed, fundamentally, on a single floor but it is, however, provided with a staircase made with fine chestnut which leads into a 20 sf private upper terrace (loggia) with the floors made with chestnut.
The property, purged on a hill at 650 m above sea level, enjoys a southerly panoramic view, a charming panorama drawn from the underlying valley and its plain which is interposed to the mountainous chain of the Matese that stands out on the horizon for 180 degrees from east to west.

The other source at about 200 mt has an abundance of Natural Spring Water the entire water source for this spring is an aquifer.
